Quick & Easy Christmas Ham Glazes

For quite a number of years I made and sold a citrus-based ham glaze that covered goodness-knows how many hams over the years. It still exists in New Zealand – made by someone else now – and it still makes me smile to think I had a presence at so many Christmas tables for so long!
The second glaze recipe I created more recently and is based on the same principles; something fruity and tangy, something sweet and sticky to bind it, a slug of grainy mustard and the zing of lime to cut the sweetness and ramp up the tropical flavour.
Perfect as a super-easy ham glaze for your Christmas table, but also guaranteed to find its place in your summer barbecuing repertoire – it’s delicious on pork ribs.
Make these now and put aside for when it’s time to glaze your Christmas ham – they also make great gifts for busy people!

INGREDIENTS

CITRUS, HONEY & STAR ANISE HAM GLAZE
1 cup marmalade
½ cup honey
¼ cup grainy mustard
4 whole star anise

MANGO, GINGER & LIME GLAZE
354g jar Sharwood’s Mango & Ginger Chutney
¼ cup runny honey
2 Tb wholegrain mustard
1 small lime, finely grated zest and juice

DIRECTIONS

CITRUS, HONEY & STAR ANISE HAM GLAZE

  • In a medium bowl, mix the first three ingredients until well combined.  Stir in the star anise.
  • Store in a jar in a cool place until needed.

MANGO, GINGER & LIME GLAZE

  • Mix all ingredients together in a small bowl.
  • Store in a sealed container in the refrigerator.

TO GLAZE YOUR COOKED HAM:

  • Preheat the oven to 180°C.
  • Remove skin & score the surface of the ham by making diagonal cuts about 
5mm deep. 

  • Place ham in a large roasting pan. Pour glaze over ham, then pour 1 cup of water into bottom of pan. (This helps prevent glaze from burning on the bottom of the baking dish)

  • Cook in preheated oven for 45–60 minutes, basting several times during cooking. As the water evaporates the glaze will reduce back to its sticky, shiny goodness.
  • Serve warm from the oven, or cool and decorate as desired.
